To make our cranberry pecan salad, you'll need:

1 lb. fresh cranberries
2 navel oranges, peeled and diced
1 cup chopped pecans
1/2 cup crumbled blue cheese
1/4 cup white balsamic vinegar
1/4 cup honey
1 tablespoon Dijon mustard
Salt and pepper to taste

Start by mixing together the cranberries, oranges, pecans, and blue cheese in a large bowl. In a separate bowl or jar, whisk together the vinegar, honey, Dijon mustard, salt and pepper. 1 lb. Brussels sprouts, halved

2 tbsp. olive oil

Salt and pepper, to taste

4 oz. goat cheese, crumbled

1/2 cup dried cranberries

1/2 cup chopped pecans, toasted

Directions:

1. Preheat oven to 400 degrees F.

2. In a large bowl, toss together Brussels sprouts, olive oil, maple syrup, salt and pepper.

3. Spread mixture in a single layer on a baking sheet and roast for 20-25 minutes, stirring once or twice, until sprouts are tender and caramelized.

4. Remove from oven and let cool slightly before adding goat cheese, cranberries and pecans. Serve at room temperature or chilled.

Sweet Potato Apple Salad

-2 large sweet potatoes, peeled and cubed
-1 large Granny Smith apple, peeled and cubed
-1/2 cup diced celery

-1 tablespoon apple cider vinegar
-3 tablespoons olive oil
-salt and pepper to taste

1. Preheat oven to 375 degrees F.

2. In a large bowl, mix together all of the ingredients except for the salt and pepper.

3. Spread the mixture onto a baking sheet and roast for 25 minutes, stirring once halfway through.
